Citrus Baked Pears with Nut Granola (df, gf)

Ingredients

For Pears: 

  • 6 pears
  • Juice of ½ an orange
  • 2 tsp cinnamon

For Granola:

  • 360 g raw mixed nuts (just under 2 cups)
  • Juice of ½ an orange
  • 1 tbsp olive oil
  • 1 tsp cinnamon
  • Pinch sea salt

To Serve:

Method:

  1. Preheat your oven to 160°C. Wash your pears and place them into a baking dish. Drizzle over the juice of half an orange, and sprinkle the cinnamon on top.
  2. Place these into the oven and bake for 45-50 minutes, or until lightly brown and tender the whole way through (it should slice through easily with a knife).
  3. While these are baking, roughly chop all the nuts and place them into a bowl. Add the juice of half an orange, cinnamon, salt and oil and give it a good mix through.
  4. Spread the mix onto a lined baking tray and pop them into the oven for 10-15 minutes. Make sure to turn them over half way through. Check on these regularly to make sure they don’t burn!
  5. Once golden, remove from the oven and leave to cool completely before serving. Store leftovers in a sealed container in the fridge.
  6. Once the dish is ready, slice them in half and plate them up with a few tablespoons of Raglan Food Co yoghurt, nut granola, a sprinkle of cinnamon and a drizzle of honey.
  7. Serves 6. Enjoy!
